This week’s recipe is a fun take on a classic: a quick and colourful veggie fried rice made entirely with ingredients from your $25 trolley. It’s the kind of dish you can whip up in a flash, and it’s great for using up leftovers too.
What You’ll Use from Your $25 Trolley:
- 1 cup Good Food White Rice
- 1 cup Stir Fry Vegetables (snap frozen – no prep needed!)
- 2 tbsp Good Food Hoisin Sauce
- 1 tbsp Good Food Teriyaki Sauce
- ½ cup Four Farms Garden Peas or Corn (or both!)
How to Make It:
1. Cook the Rice
- Bring a pot of water to a boil with a pinch of salt.
- Add 1 cup of white rice and stir.
- Simmer on low for about 10–12 minutes until tender.
- Drain any excess water and let the rice cool slightly. (Tip: if you can, cook the rice earlier in the day or use leftover rice—it fries better when cold!)
2. Prepare the Veggies
- In a large non-stick frypan or wok, add a splash of oil over medium-high heat.
- Add 1 cup of stir fry vegetables and ½ cup of peas and/or corn.
- Stir-fry for 3–4 minutes, until the veggies are hot and slightly golden on the edges.
3. Add the Rice
- Add your cooked (and slightly cooled) rice to the pan.
- Use a spoon or spatula to break up any clumps and combine with the veggies.
- Stir-fry for 2–3 minutes, letting the rice heat through and begin to toast slightly.
4. Flavour it Up
- Pour in 2 tablespoons of hoisin sauce and 1 tablespoon of teriyaki sauce.
- Stir everything well so the rice is evenly coated in the sticky, sweet-savoury sauce.
- Fry for another 2–3 minutes, until the rice is lightly crisped and aromatic.
5. Serve & Enjoy
- Serve hot, straight from the pan.
- Add a sprinkle of cracked pepper or chilli flakes if you like a little kick.
