Curry night just got a budget-friendly glow-up! This one-pot potato and veggie curry is easy to make, kind on your wallet, and full of nourishing ingredients, straight from your $25 trolley.
It’s warm, comforting, and mild enough for the whole family. Served over fluffy rice, it’s a complete meal that tastes like it took hours (but really didn’t).
What You’ll Use from Your $25 Trolley:
- 1 can Good Food Baby Potatoes
- 2 cups Good Food White Rice
- 1 cup Stir Fry Vegetables
- 2 tbsp Good Food Tomato Paste
- ½ cup Four Farms Garden Peas or Corn
- Spices (if you have them): curry powder, garlic, onion, cumin
- Salt & oil
Method – Step-by-Step:
1. Cook the Rice
- Rinse 2 cup of rice under cold water.
- Add to a pot with 2 cups of water and a pinch of salt.
- Bring to a boil, reduce heat, and simmer with lid on for 10–12 minutes until water is absorbed.
- Fluff with a fork and set aside.
2. Start the Curry Base
- In a large frypan or pot, heat 1 tbsp oil over medium heat.
- If you have garlic, onion, or curry powder, fry them for 1–2 minutes until fragrant.
3. Add the Veggies & Potatoes
- Drain the can of baby potatoes and cut larger ones in half.
- Add potatoes, 1 cup stir fry vegetables, and ½ cup peas or corn to the pan.
- Cook for 5–6 minutes, stirring occasionally, until veggies begin to soften.
4. Stir in the Tomato Paste
- Add 2 tbsp tomato paste and ½ cup water.
- Stir well to coat all ingredients. Add a pinch of salt, pepper, and a dash of curry powder if you have it.
- Simmer for 10–15 minutes until everything is tender and the sauce thickens slightly.
5. Serve & Enjoy
- Spoon the curry over a bed of fluffy white rice.
- Garnish with herbs or a dollop of plain yoghurt if you’ve got some on hand.
